Is everyone enjoying the Food Revolution Summit?
As I write this, I am watching a fascinating lecture entitled, Native American Cuisine. This is now one of my favorite lectures. No scientific studies toargue about, no counting calories, portions, etc.
Just ignore the meat and egg references.
Dr. Frank is discussing the importance of Native American foods in our diet.
She notes that there was NO DAIRY in the Native American diet. Ever try to milk a bison?
She states that due to the foods introduced to Native Americans they now have one of the highest rates of Type 2 Diabetes. She mentions that people who return to their native diet: corn, beans, squash, chiles, tomatoes, potatoes, vanilla and cacoa can reverse their diabetes. Sound familiar?
Remember, she says, “These foods are our medicine.” Sound familiar?

Chili Smith now has plenty of beans in stock! I made a delicious Spinach Salad using a new variety of bean (Peruano) that Steve now has available. So with the beans and a delicious organic haul from the Farmers Market, I made a great salad. And I also developed a fantastic pineapple dressing.
You can find the recipe and pictures at ChiliSmith.com
Come on by Chili Smith to pick up your bean supply and check out the new beans. Steve also has delivery available.
